Broad Beans Egg Fry - Avarakkai Muttai Poriyal

Broad Beans Egg Fry - Avarakkai Muttai Poriyal - This is a simple and easy side dish for lunch. As the name suggest, this stir fry/poriyal is made using broad beans and egg. If you have not heard of this combination, then you must try it out! Broad beans goes well with Egg. Just make the Broad beans poriyal as you make usually and at last just add the egg and scramble it, as simple as that! Few of us used to add grated coconut at the end but here instead of that we are going to add the egg. Here is my version of poriyal.

Broad Beans Egg Fry - Avarakkai Muttai Poriyal

Preparation Time : 20 Minutes | Cooking Time : 15 Minutes | Serves : 3

Broad Beans/Avarakkai - 1/4 Kg
Egg - 1 No.
Onion - 1 No.
Tomato - 1 No.
Mustard Seeds - 1/4 tsp.
Red Chili Powder - 1/2 tsp.
Turmeric Powder - 1/2 tsp.
Oil - 1 tbsp.
Salt to taste


1. Clean the Broad beans, trim the edges and remove string from the sides and slice them as shown in the picture below. Finely chop the onion and tomato.
2. Heat oil in a pan and add the mustard seeds. When the mustard seeds splutter, add the chopped onion and saute till the onion turns transparent.
3. When the onion is transparent, add the chopped tomato and mix well and cook till the tomato becomes soft.
4. Add salt, turmeric power and chilli powder. Mix it well. Cook till the tomatoes are mushy and becomes think masala.
5. Add the chopped broad beans and mix well. Cook in low flame till the raw smell goes off. Do not add the water now.
6. Once the raw smell of broad beans goes off, add little water to just cook the veggie.
7. Once the vegetable is cooked and the water dries up, break one egg and add to the pan and scramble it.
Simple and easy Broad Beans Egg Fry - Avarakkai Muttai Poriyal is ready to serve. Serve as a side dish for any rice varieties or gravies. You can also take this as a side dish for chappati.
