Kara Pori

Kara Pori, this is one of the simple and easy tea time snack. When you feel lazy to prepare a snack yet you want something to have with tea... then you can choose this kara pori. This can be made in just 10 minutes. This pori will be little spicy as the name suggest. If you want it less spicy, you can try my other recipe "Masala Pori" which will be very mild so that even kids could enjoy it. I have added garlic in this recipe too as I like it, you can skip it if you don't want garlic.


Kara Pori

Preparation Time : 5 Minutes | Cooking Time : 10 Minutes | Serves : 5

Ingredients
Pori / Puffed Rice - 100 gm.
Roasted Peanuts - 1/4 Cup
Garlic - 20 to 25 cloves
Sev - 1/4 Cup
Curry Leaves - 4 Sprigs.
Turmeric Powder - 1/2 tsp.
Chilli Powder - 1 tsp.
Oil - 1 tbsp.
Salt to taste


Method
1. Keep all the ingredients ready to make Kara Pori.
a. Peel and roughly crush the garlic cloves.
2. Heat oil in a kadai, add the crushed garlic cloves. Saute for a minute and add the curry leaves.
3.Saute till the garlic starts to changes to light brown color. Add the peanuts and saute for few more minutes.
4. Once the peanuts are nicely roasted, add the turmeric powder, chilli powder and salt and mix well.
5. Add the Puffed rice and Sev. Mix it nicely till the masala and garlic mix  is well coated on the puffed rice / pori. Fry the puffed rice for 2 to 3 minutes, so that it will become more crispy. Switch off the flame.

Spicy and crispy Kara Pori is ready. Enjoy it with a cup of coffee or tea.



Note:
  1. I have added lot of garlic in this recipe, if you do not like the flavor, you can add less or no garlic.
  2. You can adjust the chilli powder according to your taste.

Agathi Poo Poriyal

Agathi Poo Poriyal, this is quite a rare dish that we make at our home (Mom's home). It is rare due to the availability of agathi poo. It is not easily available in markets. We get this flower in packets in supermarket occasionally. I have not seen this flower in Chennai markets so far but we get it in my mom's place(Coimbatore) rarely. This agathi poo is very good for health especially for problems related stomach ulcer. If you could get this flower anywhere, then give this recipe a try.


Agathi Poo Poriyal

Preparation Time : 15 Minutes | Cooking Time : 15 Minutes | Serves : 4

Ingredients
Agathi Poo - 100 gm
Onion - 1 No.
Green Chilli - 2 No.
Curry Leaves - 2 Sprigs.
Grated Coconut - 1/4 cup.
Oil - 1 tsp.
Salt to taste

Method
1. Keep all the ingredients ready to make agathi poo poriyal.
a. Wash and chop the agathi poo.
b. Finely chop the onion and green chillies.
c. Grate the coconut.
2. Heat oil in a pan, add chopped onion, green chillies and curry leaves. Saute till the onion turns transparent.
3. Add the agathi poo and give it a nice mix. The flower will start to change the color. Sprinkle some water and cook till done.
4. Once the flower is cooked, add the grated coconut and mix it well.

Healthy Agathi Poo Porial is ready. Serve it as a side dish for rice varieties.

Nadan Kozhi Roast - Country Chicken Roast

Nadan Kozhi Roast - Country Chicken Roast, this recipe is prepared in Kerala style. Actually, my in-laws are from Kerala. So, I get to know few recipes from Kerala Cusine through my mother-in-law and her sisters. This is one such dish. 


Preparation wise, this recipe is very easy to make except the part in cooking the chicken. Nadan chicken generally takes more time to cook. So, in this recipe I just altered that part by pressure cooking the chicken to reduce the cooking time. But this doesn't change the taste. It was as good as cooking on pan.

Nadan Kozhi Roast - Country Chicken Roast

Preparation Time : 15 Minutes | Cooking Time : 30 Minutes | Serves : 4 to 5

Ingredients
Country Chicken / Nadan Kozhi - 750 gm
Onion - 2 No.
Ginger Garlic Paste - 1 tbsp.
Chilli Powder - 1 tsp. Turmeric Powder - 1/4 tsp.
Curry Leaves - 2 Sprigs.
Fennel Seeds - 1/2 tsp.
Chopped Coriander Leaves - 2 tbsp.
Coconut Oil - 1 tbsp.
Salt to taste

To Grind
Black Pepper Corns - 1 tsp.
Cinnamon Stick - 2 inch piece
Cloves - 2 No.
Cardamom - 1 No.


Method
1. Keep all the ingredients ready to make Nadan Kozhi Roast - Country Chicken Roast.
a. Clean and wash the chicken.
b. Slice the onions in lengthwise.
2. Take the cleaned chicken in a pressure cooker. Add turmeric powder, chilli powder and salt. Add enough water and pressure cook the chicken for 6 to 7 whistles.
3. Heat oil in a pan, add fennel seeds and curry leaves. When it sizzles, add the onion slices.
4. Saute the onion till golden brown color. Add ginger garlic paste.
5. Saute till the raw smell of ginger garlic vanish. Now add the cooked chicken along with the leftover water. Allow it to boil.
6. In the meanwhile, grind the items mentioned under "To Grind" section to fine powder. Add the ground powder to the chicken.
7. Keep stirring the chicken often till all the water dries up and chicken becomes dry. Add chopped coriander leaves and mix well. Reduce the flame to low and allow it to roast for 5 more minutes. Once the chicken becomes dry and dark brown color, switch off the flame.

Nadan Kozhi Roast - Country Chicken Roast is ready to serve. Serve it hot with Rasam Rice or Sambar Rice. This goes well with any kind of rice dish.

Apple Dates Smoothie

Apple Dates Smoothie, this is one of the healthy and tasty beverages. As we all know apple and dates are very good for health. You may prepare this smoothie and give this as part of breakfast to your kids. All that we need to prepare this is apple, dates, milk and sugar (if you prefer). It is good have without sugar if you are health conscious. The combination of apple and dates will be really good to taste. Try this out, definitely you guys will like it!


Apple Dates Smoothie

Preparation Time : 15 Minutes | Cooking Time : 15 Minutes | Serves : 4

Ingredients
Apple - 3 No.
Dates - 10 No.
Boiled and Cooled Milk - 2 glasses
Sugar - according to taste

Method
1. Keep all the ingredients ready to make Apple Dates Smoothie.
a. Peel the apple skin and cut them into cubes.
b. Soak the Dates in water overnight.
c. Boil and cool the milk.
2. Add the apple cubes and soaked dates into a juicer jar.
3. Blend it roughly.
4. Add the boiled and cooled milk and sugar. Blend it until smooth and frothy.

Simple, healthy and tasty Apple Dates smoothie is ready to be served. Tastes good when chilled.

Carrot Moong Dal Sambar

Hello Friends, its been long since I posted here... We had guests at home for few days then we went for a holiday trip and after that I was little lazy to post and the days went on like that ;) So after a long time, I am posting Carrot Moong Dal Sambar today. 


This is a very simple sambar to prepare which can be used as side dish for tiffin items. This sambar will not taste that good with rice, atleast I don't prefer it with rice. But will taste wonderful with idli, dosa, uttapam etc.

Carrot Moong Dal Sambar

Preparation Time : 5 Minutes | Cooking Time : 20 Minutes | Serves : 3

Ingredients
Carrot - 1 No.
Moong Dal - 50 gm.
Shallot - 4 to 5 No.
Onion - 1/2 tsp.
Tomato - 1 No.
Green Chilli - 2 No.
Sambar Powder - 1/2` tsp.
Curry Leaves - 2 Sprigs.
Turmeric Powder - 1/4 tsp.
Cumin Seeds - 1/4 tsp.
Asafoetida - 1/4 tsp.
Mustard Seeds - 1/4 tsp.
Chopped Coriander Leaves - 2 tsp.
Oil - 1 tsp.
Salt to taste

Method
1. Keep all the ingredients ready to make Carrot Moong Dal Sambar.
a. Grate the carrot.
b. Peel and chop the shallots.
c. Roughly chop the tomato.
d. Finely chop the onion. (We will use this for tempering)
2. Take a pressure cooker and add moong dal, grated carrot, shallots, tomato, green chilli, cumin seeds and asafoetida. Add enough water and pressure cook it for 4 to 5 whistles. Once the pressure is released, open the lid and mash the dal nicely using a ladle or a masher.
3. Place the cooker with dal on flame, add sambar powder and salt. Add water and mix it well. Allow this mixture to boil.
4. While it is boiling, let us prepare the tempering. Heat oil in a tadka pan, add mustard seeds. When the mustard seeds splutter, add the onion and curry leaves. Saute till the onion turns light brown color.
5. Add the tempering to the boiling sambar. Give it a nice mix.
6. Let the sambar boil till the raw smell of sambar powder goes off. Add chopped coriander leaves and switch off the flame.
Easy Carrot Moong Dal Sambar is ready to serve. Serve this sambar with idli, dosa, uttapam etc.
