Aloo Samosa

Aloo Samosa, this is one of the popular street food in India. The appearance and taste differs in each part of India. The one I have shared here is a basic aloo samosa. In our place, we get different variety of samosas, but my husband like a samosa from one particular shop in our area. In that shop they serve a special chutney as a side dish for samosa instead of ketchup. 

My husband was asking me to try that samosa and chutney for quite some time. One fine day, I tried it!  I managed to get the similar taste but not the exact one:( Still the samosa tasted good. Chutney also came out well. Both made a wonderful combination. I did not click the pictures of the chutney made, so I will post it separately when I make it again.

Aloo Samosa

Preparation Time : 30 Minutes | Cooking Time : 30 Minutes | Serves : 5


For Stuffing
Potato - 3 No.
Onion - 2 No.
Carrot (Big) - 1 No.
Ginger - 1 inch piece
Green Chillies - 5 No.
Turmeric Powder - 1/4 tsp.
Chilli Powder - 1 tsp.
Garam Masala Powder - 1 tsp.
Amchur Powder - 1/2 tsp.
Chopped Coriander Leaves - 2 tbsp.
Cumin Seeds - 1/2 tsp.
Oil - 1 tbsp.

For Pastry Cover
Maida / All Purpose Flour - 200 gm.
Carom Seeds / Ajwain / Omam - 1/2 tsp.
Salt to taste
Oil - 1 tbsp. + oil for deep frying

1. Keep all the ingredients ready to make Aloo Samosa.
a. Pressure cook the potato and mash it using a masher.
b. Crush the ginger and green chillies together.
c. Grate the carrot and chop the onions.
2. To prepare the dough, add the maida, carom seeds and salt in a wide mixing bowl. Add water little by little and kneed it to a dough. Add a tablespoon of oil and kneed further to make dough which is little harder than chapati dough consistency. Cover it and set aside for about 30 minutes.
3. Heat oil in a pan and add cumin seeds. When the cumin seeds start to sizzle, add the crushed ginger and green chilli paste. Saute till the raw smell goes away.
4. Add chopped onion and saute till it turns transparent. Add turmeric powder and slat and mix well.
5. Add the grated carrot and saute for 2 to 3 minutes. Add chilli powder, garam masala powder and amchur powder and mix well. Sprinkle some water and cook till the carrot is cooked.
6. Add the mashed potatoes and mix well. Add the chopped coriander leaves and mix  it well. Now the stuffing is ready.
 7. Split the dough into medium sized balls and roll them into thin circles. Cut them into two equal halves. Take each half and make a cone shape as shown below.(Paste the corners using little water)
8. Now add the stuffing inside the cone and paste the edges using little water.
9. Heat oil in a heavy bottom pan, and slide in the samosas one by one in hot oil. Reduce the flame to medium and fry till it becomes golden brown.

Tasty and Crispy Aloo Samosa is ready to serve. Serve it with hot tea as an evening snack.
