Spicy Egg Bhurji

Spicy Egg Bhurji, this is one of the favorite and common egg recipe we make in our home. I make this bhurji as a side dish for any thing like chapati, bread, rice etc., This will go well with everything. Also, this is an easy to make dish when you don't have any vegetable in hand for lunch or dinner. I have already posted a recipe for Simple Egg Bhurji for which you do not need much ingredients. Spicy Egg Bhurji

Preparation Time : 15 Minutes | Cooking Time : 15 Minutes | Serves : 3

Egg - 3 No.
Onion - 2 No.
Green Chili - 2 No.
Tomato - 1 No.
Ginger - 1/2 inch piece
Curry Leaves - 2 Sprigs.
Coriander Leaves - 2 Sprigs.
Turmeric Powder - 1/4 tsp.
Chili Powder - 1/4 tsp.
Garam Masala - 1/4 tsp.
Mustard Seeds - 1/4 tsp.
Cumin Seeds - 1/4 tsp.
Oil - 1 tbsp.
Salt to taste

1. Keep all the ingredients ready to make Spicy Egg Bhurji.
a. Break the eggs into a bowl and add salt, turmeric powder, chili powder and garam masala. Beat it nicely, so that everything mixes well.
b. Finely chop the onion, tomato, green chili, ginger, curry leaves and coriander leaves.
2. Heat oil in a pan, add mustard seeds and cumin seeds. When they splutter, add the chopped green chili, curry leaves and ginger and saute it well till raw smell goes off.
3. Add chopped onions and saute till they turn translucent.
4. Add chopped tomato and saute for a minute. Add salt and turmeric powder and mix well. Saute till the tomato is cooked.
5. Add the beaten egg and mix well.
6. Keep stirring till the eggs are cooked and become dry. Add chopped coriander leaves and mix it well.

Spicy Egg Bhurji is ready to serve. Enjoy it hot with chapati, bread or rice.
