Coconut Rice - Thengai Sadam

Coconut Rice - Thengai Sadam, here is yet another recipe for our busy morning especially for packing lunch boxes. We can make coconut rice using coconut milk also which will be little rich in taste. This is a very simple and easy dish to prepare which requires very less ingredients. We can make this dish within half an hour. Any dry fries like potato fry, bhindi fry, yam fry, capsicum fry etc will go well with this rice.

Coconut Rice - Thengai Sadam

Preparation Time : 15 Minutes | Cooking Time : 15 Minutes | Serves : 3

Coconut - 1 Cup
Steamed Rice - 2 Cup.
Shallots - 20 No.
Green Chilli - 3 No.
Dry Red Chilli - 3 No.
Curry Leaves - 2 Sprigs.
Turmeric Powder - 1/4 tsp.
Mustard Seeds - 1/4 tsp.
Urad Seeds - 1/4 tsp.
Cumin Seeds - 1/4 tsp.
Chana dal - 1/2 tsp.
Oil - 1.5 tbsp.
Salt to taste

1. Keep all the ingredients ready to make Coconut Rice.
a. Boil the rice and  keep it ready.
b. Grate the coconut.
c. Chop the shallots, green chillies and dry red chillies.
2. Heat oil in a pan and add mustard seeds. When the mustard seeds splutter, add urad dal and chana dal. Saute till they turn golden brown. Add the cumin seeds. When it sizzles, add in the shallots, chillies and curry leaves. Saute it for a minute.
3. Add turmeric powder and salt. Saute it till it turns transparent.
4. Add the coconut and mix it well. Saute it for just 2 minutes.
5. Add the cooked rice and mix it well for about a minute in a low flame so that the coconut mix coats well on the rice. Switch off the flame after a minute.

Simple and easy Coconut Rice - Thengai Sadam is ready to serve.
