Beetroot Poriyal - Beetroot Stir Fry

Beetroot Poriyal - Beetroot Stir Fry, today I feel little lazy to write a post so, I have picked one of the easiest recipe that we make in our day to day cooking. I know, people do beetroot poriyal in different ways, but believe me this will be the most easiest recipe to make in the morning to pack for the lunch box. Not much ingredients required to make this poriyal. Hope this post will be really helpful for the beginners. OK... lets move on to the recipe.

Beetroot Poriyal - Beetroot Stir Fry

Preparation Time : 15 Minutes | Cooking Time : 20 Minutes | Serves : 4

Beetroot - 2 No.
Onion - 1 No.
Green Chili - 2 No.
Curry Leaves - 2 Sprigs.
Grated Coconut - 2 tbsp.
Mustard Seeds - 1/4 tsp.
Urad Dal - 1/4 tsp.
Oil - 1 tbsp.
Salt to taste

1. Keep all the ingredients ready to make Beetroot Poriyal.
a. Peel and grate the Beetroot.
2. Chop the onion and green chilies.
Heat oil in a pan and add mustard seeds. When the mustard seeds splutters, add the urad dal.
2. Add the chopped onion, green chili and curry leaves. Saute till the onion turns soft and transparent.
3. Add the grated beetroot and mix it well.
4. Sprinkle very little water and add some salt, mix it well. Cover it with a lid and allow it to cook.
5. Once the beetroot is cooked, switch off the flame and add the grated coconut and mix it well.

Thats it! Easy Beetroot Poriyal is ready to serve. Serve it as a side dish for any rice like sambar rice, rasam rice or any variety rice.
