Beetroot Pachadi

Beetroot Pachadi, this recipe is well known in Kerala especially during Onam. Pachadi is generally made using vegetable and curd / plain yogurt. Pachadi is a typical South Indian dish. This is similar to Raita made in North India. In Pachadi, we get the flavor from the coconut and cumin. In raita, we do not add coconut generally. We make pachadi using different vegetables like mango, cucumber, chow chow, raw papaya etc. My husband's favorite is Beetroot Pachadi. Here is the colorful Beetroot Pachadi...


Beetroot Pachadi

Preparation Time : 10 Minutes | Cooking Time : 20 Minutes | Serves : 4

Ingredients
Beetroot(Big) - 1 No.
Curd / Plain Yogurt - 1/2 Cup
Curry Leaves - 2 Sprigs.
Mustard Seeds - 1/4 tsp.
Coconut Oil - 1 tbsp.
Salt to taste

To Grind
Grated coconut - 2 tbsp.
Cumin Seeds - 1/2 tsp.
Green Chilli - 1 No.

Method
1. Peel and chop the beetroots into medium sized pieces. Add the beetroot pieces to a pan and add water till the pieces are immersed. Allow it to cook till the beetroot is fully cooked and the water dries up. Let the beetroot cool down to room temperature.
2. Once it is cooled, add them to a blender and grind it to a smooth paste. Take the curd in a bowl and whisk them until smooth and keep it ready.
3. Add the beetroot paste to a pan and bring to boil. In the mean time, add the items mentioned under "To Grind" section and grind it to a coarse paste. Once the beetroot paste start to bubble, add the coconut paste and mix it well.
4. Switch off the flame after a minute. Allow the beetroot mix to cool to room temperature and then add the whisked curd and mix it well.
5. Temper it with coconut oil, mustard seeds and curry leaves. Mix it well.

Tasty and Colorful Beetroot Pachadi is ready to Serve. Usually, this is served as a side dish in Onam Sadhya. But this will be good to have Chapati too. In our house, we just eat it as it is :p
