Vendakkai Sambar - Lady's Finger Sambar

Vendakkai Sambar - Lady's Finger Sambar, one of the common dish in Tamil Nadu. This is a very very simple and basic recipe many of you might already know it but procedure of making differs from person to person. Though we use different vegetables in sambar, each one will have its unique taste and flavor. Same is the case with lady's finger, it will give a very nice flavor and tastes wonderful when used in sambar. I thought of posting this because, atleast some beginners will learn from this post. For those who already know how to make sambar, try out my version of vendakkai sambar.


Vendakkai Sambar - Lady's Finger Sambar

Preparation Time : 15 Minutes | Cooking Time : 30 Minutes | Serves : 4

Ingredients
Lady's Finger - 15 No.
Shallots - 20 No.
Tomato - 1 No.
Toor Dal - 3 tbsp.
Garlic - 5 to 6 Cloves
Asafoetida - small piece.
Green Chili - 3 No.
Cumin Seeds - 1/4 tsp.
Mustard Seeds - 1/4 tsp.
Urad Dal - 1/4 tsp.
Tamarind - 1 Gooseberry Size
Turmeric Powder - 1/4 tsp.
Sambar Powder - 1 tbsp.
Chopped Coriander Leaves - 1 tbsp.
Salt to taste
Oil - 1 tbsp.

Method
1. Keep all the ingredients ready to make vendakkai sambar.

b. Peel ans wash the shallots and garlic cloves.
c. Roughly chop the tomatoes.
d. Soak the tamarind in warm water for about 15 minutes and extract its pulp and discard the fiber.
2. Pressure cook toor dal along with cumin seeds, garlic cloves, green chili, asafoetida, turmeric powder and 2 shallots for 4 whistles.
3. Heat oil in a pan and add the mustard seeds and urad dal. When the mustard seeds splutter, add the shallots and saute till the color changes and becomes soft. Add the layd's finger and saute till the stickiness goes off.
4. Add the tamarind extract and bring to boil. Add the chopped tomato and salt. Mix it well.
5. Add the sambar powder and mix well. Let it boil till the raw smell of masala and tamarind goes off.
6. Add the cooked dal and allow it cook for 5 more minutes. Add chopped coriander leaves and switch off the flame.

Vendakkai Sambar - Lady's Finger Sambar is ready to serve. Serve it with hot steamed rice with any side dish of your choice.
