Tomato Rice - Method 1

Tomato Rice, I hope this will be one of the common lunch box menu in our home. There are many ways in which we can prepare the tomato rice like biriyani style tomato rice, tomato rice using pureed tomatoes etc. I will definitely post all the varieties of tomato rice that I know but today, I have shared a very simple tomato rice that can be prepared in less than half an hour. This will really help us in the busy mornings to pack lunch for our kids.

Tomato Rice

Preparation Time : 20 Minutes | Cooking Time : 15 Minutes | Serves : 3

Steamed Rice - As Required
Tomato (Medium Siz) - 6 No.
Onion (Medium Siz) - 2 No.
Garlic (Small) - 10 Cloves
Dry Red Chilies - 3 No.
Channa Dal - 1 tsp.
Mustard Seeds - 1/4 tsp.
Asafoetida - small piece
Curry Leaves - 2 Sprigs
Oil - 1 tbsp.
Salt to taste

1. Keep all the ingredients ready to make the tomato rice.
a. Cook the rice and keep it aside.
b. Chop the onions, tomatoes and garlic cloves.
2. Heat oil in a kadai and add the mustard seeds. When the mustard seeds splutter, add the asafoetida and channa dal and fry for a minute. Add chopped onion, dry red chilies and curry leaves and saute till the onion turn transparent. Now add the chopped tomatoes and salt.
3. Cook the tomatoes till it becomes soft and mushy. When the water content in tomatoes dries up, add the steamed rice and mix it up well.

Easy and tasty Tomato rice is ready to serve. Serve it with aplam or vathal.
