Mixed Vegetable Kurma

Mixed Vegetable Kurma for Chapati / Poori - Kurma is one of the best combination for chapati. Many people like to have kurma with Poori. But I usually make kurma for chapati. There are many ways in which we can prepare kurma, this recipe is one among that. This is one of the healthy side dish  for chapati as we are going to add lot of vegetables in this kurma. It will not be very spicy, so kids will definitely like it.

Mixed Vegetable Kurma

Preparation Time : 20 Minutes | Cooking Time : 30 Minutes | Serves : 4

Carrot - 2 No.
Beans - 10 No.
Potato - 1 No.
Cauliflower florets - 1/4 Cup
Fresh Green Peas - 100 gm
Onion - 2 No.
Tomato - 2 No.
Ginger Garlic Paste - 1 tsp.
Turmeric Powder - 1/4 tsp.
Red Chili Powder - 1/2 tsp.
Garam Masala Powder - 1/4 tsp.
Salt to taste

To Grind
Green Chili - 1 No.
Dry Red Chili - 1 No.
Fried Gram - 1 tbsp.
Grated Coconut - 3 tbsp.
Fennel Seeds - 1/2 tsp.
Poppy Seeds - 1 tsp.
Cashew Nuts - 5 No.

To Temper
Oil - 2 tbsp.
Cinnamom Stick - 1/2 inch piece
Cloves - 3 No.
Cardamom - 1 No.
Star Anise - 1 No.
Bay Leaf - 1 No.
Coriander Leaves - 2 Sprigs

1. Keep all the ingredients ready to make mixed vegetable kurma.
a. Chop the vegetables into medium sized pieces.
b. Cut the cauliflower into medium sized florets.
c. Finely chop the onions and tomatoes.
d. Soak poppy seeds and cashew nuts in water for minimum 15 minutes.
2. Add carrot, beans, potato and green peas in a pressure cooker and cook it for 2 to 3 whistles. Boil water in a pan with salt and turmeric powder, add the cauliflower florets and cook for 2 to 3 minutes.
3. Heat oil in a pan and add all the ingredients listed under "To Temper" and saute for few seconds. Add the chopped onions.
4. Saute the onion till transparent and add the ginger garlic paste. Saute till the raw smell of ginger garlic paste vanishes.
5. Add the chopped tomatoes and saute till the tomatoes become soft.
6. Add the red chili powder, turmeric powder, garam masala and salt. Mix well and cook till the tomatoes become mushy.
7. Add the cooked vegetables to the onion tomato masala. Mix it well and add required amount of water. Let it boil.
8. Add all the ingredients mentioned under "To Grind" section to a blender and grind it to a paste. Add this paste to the vegetables.
9. Let it cook for about 5 minutes. Add the chopped coriander leaves and mix well. Allow the kurma to thicken. Switch off the flame when it reaches the required consistency.

Mixed Vegetable Kurma is ready to serve with chapati, roti or poori.
