Mint Rice - Pudhina Sadam

Preparation Time : 10 Minutes | Cooking Time : 30 Minute | Serves : 3

Mint Leaves - 1 bunch
Steamed Rice - as required
Green Chili - 3 no.
Garlic - 5 no.
Ginger - 1/2 inch piece
Fennel Seeds - 1/2 tsp.
Cloves - 4 no.
Cinnamon Stick - 1/2 inch piece.
Onion - 2 no.
Curry Leaves - 2 Sprigs
Lemon - 1/2
Oil - 2 tbsp.
Salt to taste

1.Keep all the ingredients ready for making the mint rice.
a. De-stem the mint leaves and wash it.
b. Thinly slice the onions.
2. Grind the mint leaves, garlic, ginger and green chilies into a paste using a blender.
3. Heat oil in a pan, add fennel seeds, clove and cinnamon sticks. When they sizzle, add onion and curry leaves.
4. Saute the onions till they turn golden brown. Add the ground mint paste and salt. Mix it well.
5. Cook till the water dries up and the mint mix become like a thick paste. Squeeze the juice of half a lemon and mix well. Add the steamed rice and mix it well.

Easy and tasty Mint Rice is ready to serve. Can be served with any roasted accompaniment like roasted potato, roasted raw banana or some fries like aplam, vathal etc.
