Kasi Halwa - Poosanikai Halwa - Ash Gourd Halwa

Kasi Halwa - Poosanikai Halwa - Ash Gourd Halwa, this is an easy and simple sweet recipe to attract your guests. This halwa needs very few ingredients to prepare it. Even if you are doing this sweet for the first time, you cannot go wrong if you follow the below mentioned steps. Believe me, its going to taste wonderful. If you want it to be even more tastier and delicious, try this halwa with the combination of vanilla ice cream. You will love it!


Kasi Halwa - Poosanikai Halwa - Ash Gourd Halwa

Preparation Time : 15 Minutes | Cooking Time : 30 Minutes | Serves : 5

Ingredients
Ash Gourd / Poosanikai - 1 Kg
Sugar - 1/2 Kg
Cashew Nuts - as required
Cardamom Powder - 1/4 tsp.
Food Color - a pinch
Ghee - 3 tbsp

Method
1. Remove the thick skin of ash gourd / poosanikai. Also remove the spongy part with seeds. Grate only the flesh of the ash gourd. While grating, it will ooze out water. Do not drain the water, we will use the vegetable along with the water.
2. Heat a table spoon of ghee in a pan and roast the cashew nuts till golden brown and transfer it to a plate or bowl.
3. In the same pan, add the grated ash gourd along with its juice which oozed out while grating. Toss well to mix with the ghee. Close the lid and cook covered until the vegetable is fully cooked and becomes soft. Note: While cooking, it will ooze out more water.
4. Once the vegetable is cooked and water starts drying up, add the sugar little by little and keep stirring. It will leave some more water after adding the sugar. Keep stirring till the vegetable thickens.
5. Add a pinch of food color and mix well.
6. Keep stirring till the halwa thickens. Add the cardamom powder and mix well.
7. Once the halwa thicken and looks sticky, add one or two tablespoons of ghee and mix well. Add the roasted cashew nuts.
8. Mix the cashew nuts with halwa and stir for few minutes till it reaches halwa consistency.  Once done switch off the flame.

Delicious and Yummy Kasi Halwa - Poosanikai Halwa - Ash Gourd Halwa is ready to enjoy. Serve it with a scoop of vanilla ice cream.
