Bitter Gourd in Onion Tomato Gravy

Bitter Gourd in Onion Tomato Gravy, generally many of us don't prefer eating bitter gourd because of its bitterness. Especially kids will not touch it we make this vegetable. But as we know, bitter gourd is very good for health particularly in controlling diabetics. In this recipe I have cooked the bitter gourd in butter milk and tamarind extract which will greatly reduce the bitterness. Adding onion tomato paste will give a different taste to this vegetable. Do try this recipe, you will definitely like it.


Bitter Gourd in Onion Tomato Gravy

Preparation Time : 15 Minutes | Cooking Time : 20 Minutes | Serves : 4

Ingredients
Bitter Gourd - 5 No.
Onion - 1 No.
Tomato - 1 No.
Garlic - 4 to 5 Cloves
Butter Milk - 1/2 Cup
Tamarind - small gooseberry size
Turmeric Powder - 1/4 tsp.
Red Chili Powder - 1/2 tsp.
Oil - 1 + 1 tbsp.
Salt to taste

Method
1. Keep all the ingredients ready.
a. Slice the bitter gourd into medium thick circles. Remove the seeds in the middle.
b. Whisk the curd until smooth and add some water and make butter milk.
c. Soak the tamarind in warm water for about 15 minutes and extract its pulp.
2. Pour the tamarind extract into a pan and bring to boil.
3. Add the butter milk to the tamarind extract and allow it to boil. Add little turmeric powder and salt. Mix well.
4. Add the bitter gourd pieces to the tamarind extract and allow it to cook. Once it is cooked, transfer it to a plate.
5. Heat oil in a pan and add the cooked bitter gourd. Saute for few minutes.
6. Add red chili powder and mix well. Fry for another 5 minutes on medium flame till it changes to light brown color.
7. Chop the onion, tomato and garlic cloves and add them to a blender. Grind it to make a smooth paste.
8. Heat oil in a pan, add the onion tomato paste and saute till the raw smell goes off. Now, add the red chili powder, turmeric powder and salt.
9. Mix well and cook till the water dries up. Add the fried bitter gourd.
10. Mix it well. Roast it well till the onion tomato paste blends well with bitter gourd and the color changes to brown. Switch off the flame.

Bitter Gourd in Onion Tomato Gravy is ready to serve.
