Vendakkai Poriyal - Lady's Finger Stir Fry

Vendakkai Poriyal / Lady's Finger Stir Fry, this is one of the simple and common dish made in almost all South Indian homes. The main part in making this dish is cleaning and cutting the lady's finger. Many might not like this vegetable because of its stickiness. Lady's Finger - 1/2 Kg
Onion - 2 No.
Dry Red Chili - 3 No.
Turmeric Powder  - 1/4 tsp.
Grated Coconut - 2 tbsp.
Mustard Seeds - 1/4 tsp.
Urad Dal - 1/4 tsp.
Oil - 2 tbsp.
Salt to taste

1. Wash the lady's finger and pat dry with a kitchen towel. Chop it into small pieces.
2. Heat oil in a kadai and add the chopped lady's finger and saute for a minute
3. After sauteing for a minute, squeeze the juice of half a lemon.
4. Fry till the stickiness goes off completely. Add little salt and fry for 2 more minutes and transfer it to a plate. Note: Add salt only after the stickiness goes off completely else the vegetable will become more sticky.
5. Heat oil in a pan and add mustard seeds. When mustard splutters, add urad dal and saute for half a minute. Add onions and dry red chili.
6. Saute the onions for a minute and add salt and turmeric powder. Mix well. Cook till the onion turns transparent.
7. Add the cooked lady's finger and mix well. Cook till the lady's finger are roasted well and the color starts changing to brown. Add the grated coconut and mix well.
Easy and tasty Vendakkai Poriyal is ready to serve. Can be served as accompaniment for any rice varieties. This will taste good even when you mix this with plain steamed rice.
