Tomato Garlic Chutney

Tomato Garlic Chutney, this is a spicy red chutney which gives a awesome combination with idli and dosa. As I have mentioned in my earlier posts, you can make lot of varieties in chutney using tomatoes. Each ingredient in combination with tomatoes will make the different. I have already made a post on tomato onion chutney which will give you a different taste. Try this chutney, it will be really hot and tasty. You can adjust the spice level to your tolerance.

Tomato - 6 No.
Garlic - 15 to 20 Cloves
Dry Red Chili - 4 No.
Mustard Seeds - 1/4 tsp.
Fenugreek Seeds - 1/4 tsp.
Cumin Seeds - 1/4 tsp.
Tamarind - a small piece
Oil - 1 tsp.
Salt to taste

1. Finely chop the tomatoes and keep other ingredients ready.  Heat oil in a pan and add mustard seeds. When mustard seeds splutter, add fenugreek seeds and cumin seeds. 
2. When the cumin seeds  sizzle, add the dry rec chilies and tamarind piece. Saute for a minute and add the garlic cloves. Make sure not to burn the chilies while frying.
3. Once the garlic is nicely roasted, add the chopped tomatoes and cook on medium flame. Cook till the water in tomatoes dries up and becomes soft and mushy. Switch off the flame when the tomatoes look like a thick paste.
4. Allow the mixture to cool down to room temperature. Once cooled, add it to a blender and grind it to your preferred consistency.

Hot and spicy tomato garlic chutney is ready. Serve it with Idli, Dosa, Uttapam etc,
