How to Make Idli - Dosa Batter and Soft Idlis

How to make Idli / Dosa Batter, Idli is one of the famous South Indian breakfast especially in Tamil Nadu. It is really easy to make the idli/dosa batter at home to cook soft idlis or crispy dosas. I generally don't prefer the packed batter which we get in the supermarkets. Hope this post will help beginners in grinding the idli batter and making soft idlis. Some might not get the right consistency for the first time but I am sure you will learn to make good batter in the next tries if you did not get it right the first time.


How to Make Idli - Dosa Batter and Soft Idlis

Preparation Time:16 Hours | Cooking Time : 30 Minutes

Ingredients
Idli Rice – 4 Cups
Urad Dal (White) – 1 Cup
Fenugreek Seeds – 1/2 tsp.
Salt to taste
Water – as needed
Gingelly Oil - 1/2 tsp (For making Idlis)


Method
1. Soak Rice, Urad Dal and Fenugreek Seeds.
a. Wash the rice well twice or thrice and drain the water.
b. Soak the rice with enough water for 4 hours. Note: Rice should be completely immersed in water.
c. Wash the urad dal and fenugreek seeds in water and drain the water.
d. Soak the urad dal and fenugreek seeds for 1 hour.
2. First, start with fenugreek seeds while grinding. Add the fenugreek seeds to the grinder and allow it grind to paste.
4. Add the urad dal and allow it grind for minimum 20 minutes. Do not add to much of water while grinding at a stretch. Add water little by little. While urad dal is grinding, the quantity of batter would rise and becomes fluffy. Check for the consistency after 20 minutes of grinding, the batter should be smooth and fluffy. Remove the the batter from grinder and transfer to a big vessel.
5. Now add the soaked rice to grinder and add some water and start grinding it. As it grinds the batter will become thick, sprinkle some water as and when it is required.
6. The consistency of the rice batter should be little thicker than the urad dal batter and it should have a little coarse texture. It might take around 25 minutes to 30 minutes to reach this consistency. Remove the the rice batter from grinder and mix it with the urad dal batter.
7. Add required salt to this batter and mix well using your hand. Set it aside for about 12 hours for fermentation. After 12 hours, you will notice that the batter would have raised well. Now the Idli / Dosa Batter is ready to prepare idli or dosa.
8. Grease the Idli Plates with oil. Pour a ladle full of idli batter in each hole of the idli plate.
9. Stack the idli plates and place it in the idli cooker. Steam the idlis for 12 to 15 minutes.
10. Idlis are ready! Wait for 5 minutes and sprinkle some water around the idlis and slide it out using a spoon.
Super Soft Idlis are ready to serve.

Note:
1. Make sure not to grind urad dal more than 25 minutes. It will become watery.
2. You can use this batter as it is for making idlis.
3. If you want to prepare dosas, add some water and mix well before making dosas.
4. You can refrigerate the batter if you have in excess and use for next 2 to 3 days.
