Mutton Fat Rice

Mutton Fat Rice, this is a different mutton recipe many may not know about this. But this is a very common preparation that my mom make whenever we have some problem with our stomach. Mainly when we have stomach ulcers, mouth ulcers etc, my mom used to do this rice. This rice is prepared using coconut oil and the main spices used are cumin seeds and pepper corns. Even though it is known for its medicinal values, it tastes wonderful.

Mutton Fat - 250 gm
Rice - 2 Cups
Shallots - 100 gm
Cumin Seeds - 1 tsp.
Pepper Corns - 1 tsp.
Ginger Garlic Paste - 1 tsp.
Turmeric Powder - 1/2 tsp.
Curry Leaves - 3 Stings
Coconut Oil - 3 tbsp.
Salt to taste

1. Wash the mutton fat and cut it into medium sized pieces. Soak rice in water for about half an hour. Keep other ingredients ready.
2. Add cumin seeds and pepper corn to a blender and grind it to a coarse powder.
3. Slice the shallots. Heat oil in a pressure cooker and add shallots and curry leaves. Saute till the shallots turn transparent.
4. Add Crushed powder and mix well. Add ginger garlic paste and turmeric powder and mix well.
5. Add the mutton fat and mix well. Cook till the fat turns pale white color.
6. Add salt and mix well.
7. Add 6 cups of water and allow it to boil. Add soaked rice, mix well and close the pressure cooker and cook for 4 whistles.
Mutton Fat Rice is ready to serve. 

Tastes best when hot because when it cools down the fat will start to freeze which will not taste good. If you want to eat after sometime, just reheat it before serving.
