Curd Rice

Curd Rice, this is a popular South Indian dish. Many people in South India complete their meal with curd rice. This rice is all time favorite for my husband and kids. One of the best option for kid's lunch box. Adding carrots and pomegranate will give you a crunchy texture to the rice. At the same time, pomegranate gives a colorful and appealing look to the rice. 

Steamed Rice – 2 Cup
Curd – 1 Cup
Mustard Seeds – 1/2 tsp.
Urad Dal – 1/2 tsp.
Asafoetida – a Pinch
Dry Red Chili – 2 Nos.
Curry Leaves – 2 Strings
Carrot – 2 No.
Pomegranate – 4 tbsp.
Salt to taste
Oil – 1 tbsp.

1. Heat oil in a pan and add mustard seeds. Once mustard seeds splutter, add urad dal, asafoetida, dry red chili and curry leaves. 
2. Add the grated carrot, mix well and  add salt, allow it cook for about 5 minutes. Switch off the flame.
3. Add little salt to the curd and Whisk the curd until smooth add it to the carrot. Adjust salt and add required water and mix well.
4. Add the cooked rice and mix well. Adjust salt and water to get a correct consistency.
5. Add pomegranate and give it a mix. 
Curd Rice is ready to be served. Serve this curd rice with pickle or any of your preferred side dish.
