Dal Fry

Dal Fry, one of my favorite side dish with hot steamed rice. It will taste wonderful to eat with potato roast. This dal tastes good with roti too but I love to have it with rice. Delicious with the flavor of ghee                                                                                                                       .

Toor Dal - 1 Cup
Cumin Seeds - 1+1 tsp.
Garlic - 6 Cloves
Asafoetida - 1/2 tsp.
Onion - 2 No.
Tomato - 2 No.
Green Chili -1 No.
Tamarind Extract - 2 tsp.
Sambar Powder - 1 tsp.
Turmeric Powder - 1 tsp.
Shallots - 6 to 7 No.
Mustard Seeds - 1/2 tsp.
Curry Leaves -  2 Strings
Dry Red Chili - 1 No.
Ghee - 1 tbsp.
Oil - 2 tbsp.
Salt to taste

1. Wash the dal and pressure cook it along with 1 teaspoon cumin seeds, half a teaspoon asafoetida, garlic cloves and turmeric powder for 4 whistles. Heat oil in a pan and add finely chopped onion and saute till it turns transparent.
2. Add chopped green chili and saute for few seconds.
3. Add chopped tomatoes and saute for a minute. Add turmeric powder, sambar powder and salt and cook till the tomatoes become soft and mushy.
4. When the onion tomato masala is cooked and becomes thick, mash the cooked dal with a masher and add it to the onion tomato masala.
5. Allow the dal to boil and add the tamarind extract. Heat equal ratio of oil and ghee in a pan for tempering and add mustard seeds and cumin seeds. Once the seeds splutter, add the chopped shallots, dry red chili, asafoetida and curry leaves.
6. Once the shallots turns transparent, add this tempering to the dal and mix well. Let the dal cook on medium flame till it reaches little thick consistency. i.e, it should not be watery. Switch off the flame and garnish with coriander leaves.
Yummy Dal Fry is ready to be served with hot steamed rice and  potato roast.
