Carrot Rice

Carrot Rice, this is one of the favorite lunch box menu at my home. My son Jubal love this rice. Kids will definitely like this dish for its attractive color. Very healthy dish which can be made in a simple and easy way                                                       .

Ingredients:
Carrot - 5 No.
Steamed Rice - 2 Cups
Shallots - 15 No.
Green Chilies - 3 No.
Mustard Seeds - 1/2 tsp.
Urad Dal - 1/2 tsp.
Channa Dal - 1/2 tsp.
Peanuts - 1 tbsp.
Curry Leaves - 2 Strings
Lemon - 1 No.

Method:
1. Grate the carrots. Chop the shallots and green chilies.Extract the lemon juice. Keep the seasoning ingredients ready.
2. Heat oil in a pan, add mustard seeds. Once the mustard splutter, add urad dal, channa dal and peanut and roast for a minute. Add green chilies and curry leaves and fry for few seconds.
3. Add chopped shallots and saute for few minutes. Add salt and turmeric powder and saute till the shallots turn transparent. 
4. Add the grated carrots and mix well. Sprinkle some water and cover and cook till the carrots are half cooked. Once the carrot is half done, switch off the flame and add the lemon juice and mix well.
5. Add the steamed rice and toss well so that the rice is nicely mixed with the carrots.
Simple and tasty Carrot Rice is ready to serve. Can be served any side dish, will go well with dry curries and fries.
